The idea is to better understand the relationship between food and health, and the project's goal is to make "a significant change in our understanding of the relationship between food and health," says Martin Howarth, director of Hallam's National Center of Excellence for Food Engineering.
Among other things, the researchers want to figure out why some people are more likely to eat sugar-heavy foods than others, and why some people are more likely to eat fats and sugars.
They'll also work with the food and beverage industry to come up with solutions.
